I can identify with the urge not to waste food - I was born in the mid-50's, only 10 years after WWII, and I remember lots of things were in short supply when I was 5 or so (another reason why British cooking got such a bad reputation in the 60's and for a long time thereafter). Food was plain and a little dull, but one had to clear the plate, or sit at the table until the cold, greasy remains were consumed. Food was rationed, of course, during WWII, so my mother continued the habit right until she passed away in 2012. But enduring the Holodomor would have been many times worse, and like the Irish Potato Famine, was a needless cruelty imposed on a nation out of cruelty and ignorance. Thank you for your article. BTW, bread seldom goes stale with me, but it does sometimes go mouldy. I hate throwing away food, but my home is often a little damp - any ideas what to do with mouldy bread? I usually discard it, but always feel somewhat guilty!
